There are quite a few options for Legend of Zelda. First and foremost is Princess Zelda herself. I'm sure she'll be very grateful when you "rescue" her from Ganon. You can also select her Tetra self. Tetra is tanner, more aggressive, as expected of a pirate captain.
Saria is perpetually trapped as a child in the games. This problem can and will be corrected if you order her. She'll be quite happy to experiment with her new adult body.
Midna, the Twilight princess can either be her true self or an altered version of her imp body. Taller, bustier, so on.
There are even more options, such as Ruto, Link's sister, so on and so forth...
